For the filling you will need 3 cups of cherries, a half cup of pitted dates, 2 teaspoons of lemon juice and a pinch of cinnamon. If you are using frozen cherries, make sure they are thawed and drained so you don’t end up with excess water.

Blend 1 cup of cherries with the lemon juice, dates, and the pinch of cinnamon. Then toss it with the remaining cherries to have a filling with part puree and part whole fruits. Put this mixture in a baking dish and top with the topping. Refrigerate in baking tray for a few hours until it becomes harder and serve.

Another great vegan dessert is the vegan strawberry cobbler. This dessert will also be made in two parts. For the filling mix a quarter cup of wheat flour, 1 and a quarter cup of sugar, a tsp of lemon juice, and 8 cups of strawberries. Remove the stem from the strawberries first.

For the topping, you will be making a crust. Mix a 1 cup of flour together (1 part wheat flour and 1 part unbleached flour) with a tsp of baking powder and baking soda. Add a tsp of salt and mix in 7 tbsp of butter. Add a two-thirds cup of milk and a tsp of lemon juice and mix until they’re evenly distributed.
Spread this mixture on the filling (that is on the baking tray).

Preheat the oven to 400 degrees F and bake for around 20-25 minutes until it forms a brown crust. Let it sit to cool down a little bit and then serve.
